When describing wine, winemakers pick out ‘characters’ like a perfume note, a food reference (ie fruit, herbs, savoury) to convey to people how that wine will actually taste. These characters are not actually in the wine, but merely help paint a picture of what the wine is like.
For example, for one wine the descriptors might be: "citrus peel, lemon meringue pie, white flowers".
